You will find heritage grain Blue Beard Durum in many of our products- a rare, drought-tolerant wheat with a deep, complex flavor!
Imported bronze dies are used which impart an excellent drawn texture for the sauce to stick to.
We finish using a traditional slow drying method of approximately 48-72 hours at room temperature.
